Once done chilling, roll out the dough until they are about ¼-inch thick. You can use flour to make it less sticky. Use cookie cutters to cut out the shape of the gingerbread men. Place them onto a lined baking sheet about 1-inch apart from each other and put them in the oven.
Make sure the cookies have cooled before you start decorating them. You can use icing to make smiles, buttons, eyes, etc. Feel free to add candy and a light dusting of cinnamon to add a little extra flavor. You can also use food coloring to change the color of the icing to make it more creative.
